Stuffed Chicken Thighs with Mushroom, Cheese, and Herb Filling

Ingredients:
- 4 boneless, skinless chicken thighs
- 1 cup mushrooms, finely chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
- 1 tbsp olive oil (for cooking)
- 1/4 cup breadcrumbs (optional, for topping)
Instructions:
- Preheat the oven to 375°F (190°C).
- In a pan, heat olive oil over medium heat. Add the mushrooms and garlic, and cook until softened, about 5-7 minutes.
- Remove the pan from heat, and stir in the cream cheese, parmesan, mozzarella, parsley, thyme, salt, and pepper. Mix well until the filling is creamy and combined.
- Carefully cut a pocket into each chicken thigh by slicing along the side, being careful not to cut all the way through.
- Stuff each chicken thigh with the mushroom and cheese mixture, and secure with toothpicks if necessary.
- Heat the remaining olive oil in an oven-safe skillet over medium heat. Brown each stuffed chicken thigh for 3-4 minutes per side.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the juices run clear.
- Optionally, top with breadcrumbs for a crispy finish and broil for 2 minutes before serving.
