Perfectly rich, tender scones made without eggs — loved by everyone, including egg-free eaters!
✨ Ingredients:
- 1 cup sugar
- 10 tsp baking powder
- 2 cups amasi (or plain cultured milk)
- 500g Rama or WoodenSpoon margarine (room temperature)
- 1 cup vanilla custard (optional – adds extra flavor & softness)
???? Instructions:
- Preheat oven to 180°C (350°F).
- In a large mixing bowl, cream the margarine and sugar together until smooth and fluffy.
- Add the amasi and mix well.
- Stir in the baking powder.
- If using, fold in the vanilla custard for a richer flavor and softer texture.
- Gradually add self-raising flour (or cake flour + extra baking powder) until a soft, slightly sticky dough forms. (Start with about 5–6 cups and adjust as needed.)
- On a lightly floured surface, roll out the dough to about 2–3 cm thick and cut into rounds or squares.
- Place on a greased baking tray or line with baking paper.
- Bake for 15–20 minutes, or until golden brown and cooked through.
- Allow to cool slightly, then serve warm with jam, butter, or cream.
☕ Perfect with:
- Tea, rooibos, or coffee
- A drizzle of honey or condensed milk
- A side of fruit or cheese
???? Note:
No eggs in this recipe – ideal for clients with allergies or dietary preferences. The custard is totally optional but gives them a delicious twist.
